Super Sweet Butternut SquashHaddockPost BakeFries

Too bad my mother is not computer literate. She would like to see evidence that I am cooking and that I can cook, albeit, not like her.


Baked Butternut Squash

cut squash into cubes

toss with olive oil, kosher salt and freshly ground black pepper

spread evenly in one layer on tray (I love using my stone cookie sheet from Pampered Chef)

cook on 350° until soft and tender


Baked Pollock

1 1/2 lbs. pollock
3/4 c. sour cream
1/2 c. Parmiggiano cheese
1/4 c. melted butter
1/2 tsp. salt
1/8 tsp. pepper

Place 1 1/2 pollock fillets in greased baking dish. Spread on fillets the mixture of sour cream, Parmiggiano cheese, melted butter, salt and pepper. Bake uncovered 30 minutes at 35°  degrees.

Fries-store bought, frozen kind.

A Perfect Mother would have also hand cut her own fresh, french fried potatoes!

They’re lucky I cooked dinner at all!

Last night at prayers before bedtime, Wonderboy thanked God for his favourite food which he quickly claimed to be SUGARY APPLES.  We laughed and realized he was more than likely referring to the one and only candy apple he ever tasted last Thanksgiving Sunday with much gratitude to my sister who thought it was ‘healthy’ and Wonderboy might enjoy it!!

Tonight at prayers before bedtime, we continued the theme of hunger and favourite foods. The ending prayer was supposed to be this: 

Tummy’s rumbling, I am hungry, Lord God, please give me food to eat.

Instead Wonderboy said:

Tummy’s rumbling, I am hungry, Lord God, please give me  [and he 

quickly interjected] SUGARY APPLES to eat! Amen.

I burst out with uncontrollable laughter.

A Perfect Mother would have never laughed out so loudly. Or perhaps an even more Perfect Mother would be making candy apples from scratch!

One of the highlights of my afternoons at home with Wonderboy and Queenie is our little snack time everyday. Today we enjoyed a glass of organic chocolate milk–so rich and creamy and thick and yummy! We also enjoyed some bunny crackers.

We snack anywhere between 3 and 4 p.m. and we have been known to snack in various places (i.e., kitchen floor, couch[rare], kitchen table, hallway, entryway). It’s certainly a tradition the children love and enjoy. Wonderboy and I quite often sit and enjoy caffe latte, which is a small amount of coffee mixed with a much larger mount of milk and sweetened with a smidgen of sugar. I think it’s a very European thing to do. In Italy this late afternoon snack is called merenda. The name itself, and the way it slides off your tongue even sounds delicious, don’t you think?

A Perfect Mother would always have a snack but probably without introducing her 3.5 year old to caffeine. An even more Perfect Mother would make the snack fresh from scratch!
